Carrot Cabbage Rice

About:


Everyday when we get up in the morning the first question would be, what to prepare for lunch today? We always wanted a healthy and easy recipe.Carrot cabbage rice is a good lunch box menu which is a colorful rice too, it will be definitely enjoyed by your family. About carrot: it has fiber, protein and no sugar in it.And it is a good source of vitamin A which helps for good vision.Cabbage is a good source of vitamin A, K, B6, C , fiber, thiamine and calcium.


Preparation Time:10-15 mins
Cooking Time : 5 - 10 mins
Serves : 2


Ingredients:

Boiled rice 
Grated Carrot and Cabbage 
Cumin Powder
Chili Powder
turmeric Powder
Chopped Onion - 1/4 Cup
Chopped Tomato - 1/2 cup
Green Chili - 2 nos
Ginger Garlic Crushed - 1 tsp


For Seasoning:

Oil
Mustard Seeds
Asafoetida
Cinnamon - 1 inch
Cloves - 2

Method:

Step 1: In a pan add oil, mustard seeds, asafoetida, cinnamon, cloves and allow it to splutter.Then add onion, tomato, green chili, crushed ginger garlic and saute well.











Step 2: Add grated carrot,cabbage saute well.Then add turmeric powder, chili powder, cumin powder and salt saute till the raw smell goes. Allow the mixed masala to cool down.

 

Step 3:Add the boiled rice with the masala and mix well. Put the stove in medium flame for 5 - 10 mins.

 

Serve hot with frymes or any veggie curry.

Sambar Powder

I have tried most of the brands of sambar powder but none can beat the taste of the homemade sambar powder.If you have spice mill grinder shops near by, you can grind the sambar powder in kgs and store it for years, but people stay in foreign countries have to buy the packed one at grocery shops. so here is the recipe to make the sambar powder at home.try it and enjoy :) 


Ingredients:

Chana Dal (Kadalai Paruppu) - 1/2 Cup
Toor Dal (Thuvaram Paruppu)-1/2 Cup
Coriander Seeds (Dhaniya seeds)-1/2 Cup
Red Chili - 6 nos
Whole Black Pepper - 1 1/2 tsp
Fenugreek - 1/2 tsp

Method:

Step 1: In pan add chana dal, toor dal, coriander seeds, red chili, whole black pepper and fenugreek without oil. Roast till you feel the aroma of the ingredients. Don't roast it too much as it will spoil the taste of the powder. When you see the dal's  color changing, switch off the stove.











Step 2: Transfer roasted ingredients immediately to a dry plate, allow the ingredients to cool down. In mixer grind well, allow the powder to cool down for sometime and transfer it to a dry airtight container. You can store it for months.

 


Note: If you need, you can add raw rice 3 tsp and dry turmeric 1 no while grinding. That will give more thickness & color to the Sambar.

Egg Tomato Gravy

About:

It's a very simple dish. Whenever you are tired from work this one would be an simple and tasty one which will be enjoyed by all. You can get the original taste of the tomato and garlic :) Try it and enjoy eating.



Preparation Time : 5 mins
Cooking Time : 15 mins
Serves : 2

Ingredients:

Egg - 4 nos
Big ripe tomatoes - 2 nos
Peeled garlic cloves - 3 nos
Cut Onion - 1/4 cup
Chili powder
Turmeric Powder
Mustard Seeds
Jeera seeds
Asafoetida
Salt
Oil

Method:

Step 1: In a deep cooking pan, add water, salt and egg. Allow the egg to cook well. Once the egg is cooked, drain the water and peel the shells of the egg. Cut slightly the sides of the egg and keep it aside. Now in mixer add tomatoes, garlic ,chili powder, grind well and keep it aside.

Step 2:In a pan add oil, mustard seeds, jeera seeds and asafoetida. Allow it to splutter, add the cut onion saute well till the raw smell goes off, then add the grind paste, turmeric powder and salt. Keep the flame in medium and saute well till the raw smell goes.

Step 3:Add the boiled egg, mix it with the gravy. Close the pan and keep the flame in low for 5 minutes.

Serve hot with rice,chapati or bread.

Sweet Bonda

About:

When you have lot of bananas at home, its the best time you can make this bonda. It's a simple and tasty recipe for evening snacks. Enjoy eating..


Ingredients:

Maida or All purpose flour - 1 Cup
Rava/Sooji - 1/2 cup
Ripe big banana - 2 nos
Sugar - 1 cup
Salt
Oil

Method:

Step 1: Soak the rava/sooji in hot water for 15 mins. In a vessel add maida, sugar, smashed bananas, a pinch of salt, soaked rava and mix well . You don't have to add water while mixing, since banana gives you enough moisture to the mixture.

Step 2: In a pan add oil. In a spoon take the mixture and make it as small balls and drop it in pan. Deep fry it.

Will be great to eat with tea or coffee at the evenings :)
You can store this in air tight container for 2 - 3 days.

Mixed Vegetable Curry/Kootu

About :

I would say this recipe is a time saving and tasty recipe. I personally love this recipe because it is a vegetable delight. Chayote/chow-chow is good in dietary fiber , helps weight loss and provides essential vitamins like vitamin C. Other than chayote you can use bottle gourd, ribbed gourd for this recipe.



Ingredients:

Mixed Vegetable (chayote/chow-chow,carrot,green beans,potato,radish)
Green Chili - 3 - 5 nos
Garlic Cloves peeled - 4 nos
Tomato - 1 no
Toor Dal - 1/2 cup
Turmeric Powder
Jeera Seeds - 1/2 tsp
Salt


For Seasoning:

Oil
Urad dal
Mustard Seeds
Jeera Seeds
Asafoetida
Coriander leaves 
Cut onion - 1/4 cup

Method:

Step 1: In pressure cooker add the mixed vegetables, garlic cloves, green chili, tomato, toor dal, turmeric powder, salt, jeera seeds and needed water wait for whistles. I used to wait for 6 - 8 whistles.
Note : The veggie's expel water while cooking so don't add excess of water the curry may go watery.

Step 2: Once the vegetables are cooked well, in a small pan add the oil, mustard seeds, urad dal, jeera seeds, cut onion and asafoetida. Allow it to splutter. Pour it on the cooked vegetables and garnish with coriander leaves.

Chicken kuzhambu

About:

In a tiring day suddenly if you feel like eating chicken with spices, i would say this would my preference. This is very easy to make, starters can definitely try this one.




Ingredients:

Chicken
Cut Pearl onions - 1/2 cup
Ripe tomato - 2 nos
Ginger Garlic Paste - 4 tsp 
Cinnamon - 2
Cloves - 4
Bay Leaves - 2
Fennel Seeds - 1/4 tsp
Curry Leaves (handful) 
Turmeric powder
Chili Powder
Coriander Powder
Pepper Powder
oil
salt

Method:

Step 1: Clean the chicken add turmeric powder to it, mix well and keep it aside. In a deep cooking pan/cooker add oil, fennel seeds,cinnamon,cloves,bay leaves and curry leaves allow it to splutter.

Note: If you use sesame oil, it will enhance the taste of the dish.

 

Step 2: Add cut pearl onions and tomatoes. Close the pan and allow to cook well then add the ginger garlic paste. Cook till the raw smell goes off.

Note: Pearl onions add more taste and thickness to the gravy.

 


Step 3: Now add the chicken, chili powder, coriander powder, salt, turmeric powder and needed water. Close the pan/cooker for 20 mins in medium flame.

Step 4 : Open the pan add the pepper powder. Check for salt and close the pan for another 10 mins in low flame.




Serve hot with chapati, dosa, idly, parata and rice.

Stuffed Spinach Chapati

Hi, I am back again with a different spinach recipe. You need to try this one at your leisure time because it needs time to prepare, but a very tasty recipe and will be liked by all your family members. Especially for the kids who don't eat veggie's, they will love this chapati. This one would be great to have for breakfast or dinner.



Preparation Time : 50 mins
Cooking Time : 30 mins
Serves : 3

Ingredients:

For Chapati:


Wheat Flour - 3 cup
Baby Spinach -  2 handful
Butter - 1 tsp
Salt 
Water

For Stuffing :


Cut Cabbage - 1 Cup
Cut Onion - 1/2 Cup
Cut Carrot - 1/2 Cup
Potato Medium Size - 2
Turmeric Powder 
Chili Powder
Coriander Powder
Salt
Oil

Method :

Step 1: Wash the spinach well , In a deep cooking pot add water and allow it to boil. Add the washed spinach to it, allow the spinach to cook well. Don't over cook the spinach. Drain the water and allow the spinach to cool down, then grind the spinach and keep it aside.

Tip: Save the drained water from spinach. That can be used while mixing the wheat flour for chapati or in other cooking .

 

Step 2: In a vessel add the wheat flour, salt, butter and mix well, then add the grind spinach mix well with needed water to make the dough soft and non sticky. Keep it aside.

Note: Since the Spinach has water in it add water carefully.

 

Step 3: Pressure cook the potatoes with salt, then peel and mash the potatoes. Cut the cabbage, onion, carrot and keep it aside. In pan add oil, cabbage, carrot saute well.

Step 4: Add the mashed potatoes, turmeric powder, chili powder, coriander powder, salt mix well till the raw smell goes. Make the dough into small balls and equally make small balls with the stuffing masala. In a floured flat surface place the dough ball and make it flat with rolling pin.

Step 5: Place the stuffing on the flat dough. Seal all the corners in center and cut the top of the sealing, roll the dough into a ball shape again with the help of the rolling pin make the dough with stuffing flat don't press hard the stuffing will come out. If the dough is sticky use some dry flour .

 

Step 6:Place the Tava in stove and put the pressed dough with stuffing on the tava. If you feel the dough is thick, using your palm press the sides and middle of the dough on tava. Again Don't press hard. flip both the sides till you see the brown spots. When the sides become crispy add oil at the sides.

 


Serve hot with curd mixed with jeera powder and coriander leaves.

Prawn Coconut Gravy

Hi all ,its been a long time .. today i am posting a coconut and prawn gravy which will definitely renew your taste buds , it has a mild spicy taste with the richness of the coconut which will compliment the rice very well . Enjoy Cooking !!!!









Preparation Time :15 -  20 mins

Cooking Time :20 mins
Serves : 2


Ingredients:


Prawn or Shrimp - 250 grams

Coconut milk      - 1 1/2 cup
Chopped Onion   - 1cup
Tomato Puree      - 2 tsp
Green Chili          - 5 - 6 nos
Ginger Garlic Paste - 1 tsp
Lemon Juice            - 2 tsp
Black pepper powder - 1tsp
Turmeric powder - 1/2 tsp
Curry leaves - 1 handful
Coconut oil  - 4 - 5 tsp



How To Cook:


Step 1: Marinate the prawns in lemon juice,black pepper powder and salt for 15 - 30 mins.Cut onions keep it aside.


Step 2:In pan add 3 tsp of coconut oil , add the onions and cut green chili saute till they are brown.


Step 3:Add the ginger & garlic paste fry it , add the prawns, turmeric powder and salt toss them well for about 2 - 3 mins.



 

Step 4:Add the tomato puree put the stove in simmer or low for 1 min.



 

Step 5:Add the coconut milk mix well till the prawns get cooked well.



 

Step 6: Fry the curry leaves in coconut oil in separate pan and add them in the gravy.





This prawn coconut gravy goes well with the rice , idiyappam and chappathi .
